- This “global food” was for centuries a speciality only known in the city of Naples, and it was believed that it could not be appreciated outside that city. From medieval times pizze (flattened pieces of bread dough) were eaten in Naples with garlic and lard or cheese and basil, or little fish. The modern pizza with tomato first appeared at the end of the 18th century. The first pizzeria was opened in Naples around 1830 (before that pizza was sold and eaten in the street). In 1889 the pizzaiolo (pizza maker) Raffaele Esposito prepared a pizza for Queen Margherita, the wife of King Umberto I of Italy, with tomato, mozzarella and a few basil leaves (red, white and green, the colours of the Italian flag). This type of pizza, now the most popular one in the world, has been called the pizza margherita ever since.
