Derzeit kennt man ca. 400 verschiedene, künstliche Aromastoffe.
In Deutschland sind davon jedoch nur 14 zugelassen, die allerdings, abgesehen von Ethylvanillin, im Lebensmittelbereich praktisch keine Bedeutung haben.
